Im thinking after you shut off your motor, its evaporating the fuel in the bowls, then when you go to start the next day the no fuel in the bowl leads to using the starting fluid or lots of cranking and pumping the accelerator
try one of those heat resistant carb gaskets before switching carbs ?
Ya I think a jetted down street avenger would be a fine carb. Really any carb adjusted properly should work
in the carb section there are lots of write ups on getting holleys and edelbroks working seamlessly
iv run an edelbrok 1400 for the past 17 years and have it dialed in good. Im positive you can get yours working the same
