Does anyone know how to test guages for temp, and oil pres to find out if it is the sending unit or the guage itself?

You can make a "tool" to test the calibration of the gauges for about $2. Go to "the shack" or other electronics store and pickup a pack of 10 ohm and 33 ohm resistors. Solder 4 of the 10s and 1 of the 33 in series, and insulate all but the 2 ends.

Disconnect the wire from the sender of the gauge you wish to test and connect the 10 ohm resistor to it and a good clean ground. Turn on the ignition and wait until the gauge has stabilized. The needle should be at the top Mark +/- 1 needle width. Repeat with your string of resistors totaling 73 ohms, the needle should read at the bottom Mark +/- 1 needle width.

If the gauge reads high then it or the cvr is out of calibration, if it reads low then in addition to the possible calibration issues you May have excessive resistance in the wiring or connections between the gauge and sender. If one reads correct and the other is off then it indicates that the problem lies with that individual gauge or wiring. The cheap stamped steel nuts connecting the gauge to the printed circuit board are a common culprit as they loosen with age.
