Anyone know what was stock?
The stamped metal panels or fabric covered?
Or are both correct?

And if the stamped metal ones....was there anything that lived behind them once unscrewed?

The steel panels have to be there either way for strength and stability. In the later d-line and Scout II models, any fabric or vinyl applique would be in conjunction with an optional trim level upgrade. Probably the same can be said for the earlier models. Main purpose for the panels is for accessing window glass, roll gear and felt glass guides. Some folks cut holes in the panels to add after market door speakers.
 
Trevor is indeed correct. The vinyl/fabric door panel cover you were describing, for the most Part only came the "deluxe trim/exterior trim" package(s) that they offered(and other packages like that). Your panel would have some screw holes surrounding the panel if it ever had a door panel cover in the first place. Also, on the line setting ticket(if you have one) would state if you're truck came with the package. Post some pictures if you like.

The 60's era travelalls/pickups came with either metal panels or
vinyl covered fiber board door panels , there was a couple different
designs of vinyl designs which I think related to the "custom" or
"deluxe" interiors ,
 
I have sand blasted and powder coated the stock metal door panels.
Upon install I have a new question....

The door handles & window cranks....
I know they attach with the pins; shoved through those holes.
Is there anything that is supposed to live behind the handles?
Like a round finishing item to help take up the gap between the handles and the metal door panel?

Here is what the escutcheons look like a couple of mine were
a bit floppy (the rubber) and the handle rattled a bit ,so I found some escutcheon springs from an old buick (I think) put spring on first then rubber ,nice and tight
