When I disassembled the front hub on my 1971 scout 800 where the U- joint is, it had a bunch of grease inside? Is this normal?

its closed knuckle right ?
i think a "special" type of grease does go in there. by special it a grease that is a little bit lighter then the usual wheel bearing grease.

wait for someone else to answer before you consider my advice, because im not 100% on this.....
 
Corn head grease is commonly used in those knuckles. It's somewhere between gear oil and light grease. Get a couple of tubes for your grease gun and pump it in there.
